Apr\u00e8s la mort de ses parents, il a grandi dans une abbaye b\u00e9n\u00e9dictine aupr\u00e8s d\u2019un moine belge, de qui il a appris la fermentation des c\u00e9r\u00e9ales et le brassage de la bi\u00e8re. Fascin\u00e9 par cet univers, \u00e0 dix-huit ans, il d\u00e9cida de quitter l\u2019abbaye pour partir en voyage \u00e0 la d\u00e9couverte des secrets des meilleures bi\u00e8res du
